Data Driven Menus (DDM)

Our Menu Development process is a comprehensive approach that offers control of all details and as part of that process we can use analytical tools to measure menu performance.
The DDM is not only used as a tool to measure the performance of new menu launches but can also be used to review the performance of exiting menus.

It takes data from the menu performance using information on dish sales and profitability, including category information that will give you an all-round view of the menu.
If your team would like to use the DDM tool for their own use it can be bought separately from the Menu Development process.

Individual dishes on the complete menu can be scrutinised, what was liked, what wasn’t liked and significantly what parts of the menu are driving profit. The data is output in easy to-follow formats with the option of viewing data through a dashboard that your teams can log onto and access.

Quality Food Coffee House New Food Concept
The Brief
A Middle Eastern investment group were planning a launch of a new food brand into the UK market. The brief to the 360 team was to devise a differentiated food offer, source a supply chain and agree commercial arrangements with food partners. The project plan included two phases, first a test on a single site with a review of performance to secure investment for the second phase of two further sites.
The 360 Project
The 360 team reviewed the target market and presented findings, including a recommended brand positioning, to all stakeholders. The team then devised an innovative and new food offering, with full costings, allergens reports and recipe guides. Commercial arrangements were put in place with food partners, including logistics. Following a successful presentation to stakeholders and investors, 360 were also asked to support the sales & marketing activity and implemented a plan that included building a website and other digital assets, promotional campaigns and sales initiatives.
The Results
The launch was successful, and the investors signed off the implementation of a further four sites, two more than originally planned.
LARGE PLC LEISURE OPERATOR – MENU DEVELOPMENT
The Brief
The Group approached 360 to produce a set of proposals to deliver a 4-year strategy to drive revenue growth in food & drink and improve customer satisfaction.

The 360 team used their Review product and process to gain an understanding of the overall business across the network of business locations. Following this review, extensive quantitative and qualitative research was undertaken to define the role of food & drink within the organisation. The next step involved producing new innovative food & drink concepts for the different sites. At the same time, 360 reviewed the current suppliers, partners and contracts. Through a procurement process, new contracts were arranged with the selected partner companies.
The Results
The food & drink investment with new concepts and new suppliers appointed proved hugely successful. Customer satisfaction on food & drink increased significantly from 25% to 67.4% and the projected 4-year strategic revenue growth exceeded all expectations and delivered in year 1.
Multi-site PLC Leisure Operator – Food & Drink Strategy

Veganism and plant based diets are a big thing in the UK at the moment. It seems that each and every day the amount of people turning their back on animal products is growing and this means that there are more people adopting the vegan approach to eating and lifestyle choices. In fact, towards the end of 2017 it is thought that there is as many as 3,000,000 meat free diners in the UK.

Restaurant and bar Operator – New Food Concept
The Brief
The client has an existing themed food & drink concept at a large leisure centre. It is an important revenue stream for the business, turning over c£1.5m per annum. A challenge for the operation however was below average customer feedback with significant wait times on food and struggling to deliver good food quality consistently.
The 360 Project
The 360 team developed a new food menu, maintaining the brand focus on the themed experience. The menu allowed a reduced skill level in the kitchen to focus the team on consistent, quicker food delivery, whilst maintaining quality on each dish. To further assist with consistency food specification manuals were produced, with other support tools such as food costing and allergens controls. As part of the project the team also renegotiated the existing food contracts to deliver savings to the business.
The Results
Customer feedback improved by 21%, linked to the reduced wait times and consistency of dish presentation and taste. The renegotiated contracts delivered procurement deals saving c£30k p/a. Sales growth during the initial 6-month peak trade period was over 11%.
Large Leisure Operator – Themed Menu & Training
The Brief
This group operate seven pubs & restaurants in the North West and North East of England. They operate two brands, the first is a pub operation focussed on quality food, made from scratch by their chefs on site, and the second brand is a smokehouse and sports bar concept. The brief was to provide menu development support, twice yearly for both brands as well as producing Christmas menus.
The 360 Project
The 360 Team, worked closely with the in-house brand teams to evolve the existing menus including plans for a further seasonal updates and Christmas menus. Working and aligning with all stakeholders within the business, 360, researched business competitors and the joint team approach delivered a fully evolved food menus for both brands. The client contacts were delighted with the project and the overall review and change particularly as the 360 team costs were 50% lower than the previous provider.
The Results
Inevitably sales were impacted by the pandemic and the reduction in capacity and change of service style. However, margins improved, and positive feedback was received via customer surveys and from the brand teams. 360 recommended further cost savings prior to the reopening of the sector, with no impact on the customer, but will save the business over £20k p/a.
